Chicken and Dumplings

Ingredients:

  • 4 large bone in, skin on Chicken Breast
  • 4 C Water
  • 2 C Chicken broth
  • 1 Carrot, roughly chopped
  • 1 Medium onion, cut into quarters
  • 1 Stalk of celery, roughly chopped
  • 1/2 t Salt
  • 1 C Milk
  • 1/4 t Freshly ground pepper
Bring all to boil and boil till chicken is tender... Remove chicken from bone and cut into bite size pieces, set aside. Remove  veggies.

Dumplings:
  • 2 C All-purpose flour
  • 1/2 t Baking soda
  • 1/2 t Salt
  • 3 T Shortening
  • 3/4 C Buttermilk

    Combine together flour, soda, salt......cut shortening in well, add buttermilk and stir till no dry flour remains. Roll out thin on floured surface, cut into small pieces, drop into boiling broth, stir gently occasionally. (not to much or dumplings will turn into mush)
  • add chicken and simmer for approx. 30 minutes or until dumplings are not doughy. Watch them closely so as not to let them stick and burn.
